- Prepare egg mixture. In a bowl add eggs, onion, tomatoes, green chillies, salt, pepper, red chilli powder. Whisk well and set aside.
- In a pan take 3 tbsp oil and put the potato mixture in it. Spread evenly like a bed of potatoes on the pan. Let it cook on slow flame for 5 minutes.
- Now flip the potato base and cook for another 3 minutes.
- Put cheese slices on potato base and then sprinkle paprika powder on the cheese slices.
- Pour the egg mixture over the potato and cheese base. Cover and cook on slow flame for 5 to 7 minutes.
- Flip the omlette and cook for another 2 to 3 minutes.
- Dish out on a platter by inverting the pan over the platter.
