- Take 2 cups basmati rice
- Make ready 2 large onions

- Prepare 2 tbsp oil
- Take 1 large tomato
Before marriage we used to have this rice from a nearby restaurant at least twice in a month during weekends. My appa calls this as"pattai sadam". Madurai is popular for Kuska rice. Rice cooked dry or plain boiled is termed as Khushka Rice.
Steps to make Kusha rice or plain Biryani:
- Pre-soak the rice. Now for making the paste in a pan add oil then add the whole garam masala. Saute it add green chiles, then whole garlic cloves roughly chopped ginger. Saute it. Then add the onion, tomato, coriander and mint leaves. Saute it for 7-8 min.
- Then let it cool and make a paste of it.
- Now in a pressure cooker add ghee, then add bay leaf. Now add the sliced onion. Saute it till light brown. Then add the chopped tomatoes.
- Saute it till it becomes mashy. Now add turmeric, redchile and garam masala powder. Add little salt to it. Mix them well. Now add the paste and again saute it for 5-7 min. Now add the beaten curd. Now let the masala cook till oil starts coming out of it.
- Now add water to it. Add the rice. Add salt as required. Cover and let it cook. It may require 2-3 whistle depending on your rice. Serve it with raita, egg masala or korma.
