  11. Take 1 tsp finely chopped coriander leaves
  12. Make ready 1 tbsp Groundnut oil
  13. Get as required Groundnut oil for frying
  14. Get as needed Water or whey (from homrmade paneer)

Steps to make Multigrain Lauki/Dudhi Thepla:
  1. In a big & deep bowl take whole wheat, Jowar, Soy flour. Add grated Bottle Gourd, curd, oil, carom seeds, heeng, turmeric powder, red chilli powder, salt, coriander leaves and mix well.
  2. Combine everything together to form a soft & smooth dough using little or no water/whey (leftover from homemade paneer) as required. Note: I didnt use any water or whey as the bottle gourd's natural juice (which i didnt squeeze off) was enough to make the dough. Cover the dough and keep aside for 15 minutes.
  3. Divide the dough into 8-10 equal portions/balls. Roll each ball into round thepla/paratha using some dry flour & cook on medium flame using oil.
  4. Serve hot with curd, Chutney or aloo-tamatar curry. Enjoy Healthy & Nutritious Theplas!
